Take a look at jabber (www.jabber.org) 
A simple jabber server is available from Jive 
http://www.jivesoftware.org/wildfire/

You can use different clients. Psi, Gaim are some of the basic clients that I 
have used, they work well. If you want collaborative whiteboard support, go 
for Coccinilla - http://hem.fyristorg.com/matben/

Its fairly simple and straight-forward to deploy the servers and clients. 

The server available from Jive has some good features and easy administration, 
but it also requires enough resources. Probably because it is Java based. I 
had deployed wildfire in my college for testing purposes, but replaced it 
with jabberd. jabberd is probably more suitable if you are going in for a 
very large scale deployment (say around 10,000 concurrent users).
